4 Recipes in constant rotation + what to read, watch, listen to and enjoy...
One of the most-used Bookmark Folders in my Google Chrome Browser is my folder of trusted Recipes 🥗 A recipe only gets saved there if we have tried it, loved it, and want to make it regularly.
I’m rarely plagued by the “What’s for dinner?!” conundrum, because I can just open that folder and instantly see recipes I know are simple and delicious. Here are four of the ones we make at least once a month:
🍜 Chilli Crisp Noodles from Recipe Tin Eats (usually add an entire back of Asian slaw that I chop + sautee for added fiber and veggies and I opt for whole-wheat noodles)
🐟 Coconut Rice With Salmon And Cilantro Sauce from Food Republic (I add chopped belle peppers and lots of spinach to the rice when it’s cooking)
🥙 Juicy Oven-baked Kebabs from Simple Home Edit (these are so easy and SO good!)
🍚 Creamy Gochujang Broth Bowls with Crispy Beef and Rice from Mason Fit (we just discovered this one a month ago and have already made it several times. An instant fav! We opt for brown rice and add spinach to the dish.)

📚 READ: The citizens of Albania have been in the streets this week, protesting the sale of protected land, including Sazan Island, to Ivanka Trump and Jared Kushner’s investment company. They’ve estimated that over 100,000 people participated in protests last night, with more planned across the country in coming days. This is definitely a story I’m keeping my eye on. While the development is being framed as the “creation of a luxury resort” it’s awfully suspicious that they are targeting an island off the coast of Europe that was once a military base and has over 3600 nuclear bunkers and miles of underground tunnels. Some experts have said that it could become a strategic base for the US to position nuclear weapons (openly, or secretly). But also do we really need to give these billionaire’s access to another island?! 📺 WATCH: This Thanksgiving we’ll get another entry in the Meet the Parents franchise: Focker In-Law. Did we need another one of these movies? I’m not entirely sure we did. But I do love the first two and I generally think Ariana Grande is pretty brilliant. Here’s the trailer:

One thing she said that felt reassuring to me, “This isn’t the worst things have ever been. It’s not even the worst things have been in the past 20 years. 🧡 ENJOY: I recently learned that tuna and peas are both excellent sources of protein — tuna is one of the most affordable protein sources in the grocery store with 20-40 grams of protein per can. Turns out our moms, grandmas and aunts were just trying to serve us balanced meals with those tuna salads! And so naturally, I made a huge batch. I used this Tuna Salad with Greek Yogurt Sauce recipe as a starting point. As-is it has 355 calories and 19 grams of protein per serving. I opted for whole grain pasta and added extra tuna, peas, and other vegetables — bringing it to 295 calories, 26 grams protein, and 5 grams fiber for a 225 gram serving. P.S. A drizzle of hot honey on tuna salad is 🔥
